For the Bacon Jam

  • 1 lb bacon, chopped
  • 1 large onion, finely diced
  • 1/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1/4 cup brewed coffee (optional, for depth)
  • 2 tablespoons maple syrup
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions
